Cookie Painting Recipe
(from "Beyond Peanut Butter and Jelly"by the International Nanny Association)

RECIPE  INGREDIENTS:
1 cup (2 sticks) butter, softened
3/4 cup sugar
1 egg
3/4 teaspoon vanilla extract
2 3/4 cups flour
3/4 teaspoon baking soda
1 tablespoon water (optional)
variety of colors of food tint
egg yolks


BEAT the butter and sugar in a large mixer bowl until creamy. Add the egg and vanilla and beat until light and fluffy. Sift the flour and baking soda into a bowl. Add the flour mixture, gradually, beating well after each addition. Divide the dough, if it is too crumbly. Cover with plastic wrap and flatten into disks using a rolling pin or your hands. Chill the dough for one hour.

REMOVE the plastic wrap and roll out the dough 1/4 to 1/2 inch thick on a lightly floured surface. Cut out six 4x6-inch "canvases." Combine 1 egg yolk and 4 to 5 drops of food tint in a paper cup and mix well. Repeat for every color of food tint. Paint the cookie canvases using the food tint and small, clean paintbrushes. Place 2 canvases on a greased cookie sheet. Bake at 350 degrees for 8-10 minutes or until golden brown. Repeat with remaining canvases.

Yield: 6 cookie paintings.

NOTE: For crisper lines and edges on your artwork, etch an outline of your paintings into the canvas with the tip of your paintbrush before painting.


Snap Crackle Pop! Summer Fried Chicken
(a healthy version of a summer picnic favorite)

RECIPE  INGREDIENTS:
2/3 cup all-purpose flour
1 tsp. dried oregano
1/2 tsp. each dried thyme, paprika and salt
1/4 tsp. garlic powder and black pepper
1 1/2 cups Rice Krispies cereal
2 tbsp grated Parmesan cheese
1 cup buttermilk
3 lbs. skinless chicken thighs and drumsticks (about 12 pieces - you can also use boneless chicken)

1. Spray a large roasting pan with non-stick spray and set aside.

2. In a shallow bowl or pie plate, combine flour, oregano, thyme, paprika, salt, garlic powder and pepper. In a separate bowl or pie plate, combine Rice Krispies and cheese. Pour buttermilk into another bowl.

3. Rinse chicken and pat dry. Working one at a time, dip chicken pieces in buttermilk and moisten all sides. Place chicken in bowl with flour mixture and turn to coat. Dip in buttermilk again, then coat with Rice Krispies mixture. Arrange chicken in roasting pan, leaving some space between pieces. This process can get a bit messy, but hang in there.

4. Bake, uncovered, at 425 degrees for 40 minutes, until chicken is no longer pink and juices run clear. Serve immediately. Makes 6 servings.
